This farm kid from North Carolina didn’t pay much attention to
oregano during my youth. In-fact, I was probably in my 50’s
before I ever cooked with it.

Today, it’s one of my favorite herbs for cooking, for it’s
medicinal properties (many of which Dr. Berg cover in this
video), and I often even put a few drops in the diffuser that I
keep in my office.

I find that it shifts me into a fairly creative mood, and I also
know that it’s purifying the air.

I smiled when I saw that Eric uses the same brand of essential
oil that I do… DoTerra. I use that brand because of how it’s
cultivated, its purity, and how the essential oil is extracted.

For cooking, I prefer fresh oregano, which I grow in my garden…
along with a dozen other herbs used in cookery 🙂

I use the essential oil in concoctions I sometimes whip up for
myself, family, friends and even consulting clients, as well as
in the diffuser.

As a side note, when my wife put oregano oil in a diffuser that
we keep in the living room during a party, one of our guests
complained that it gave her a headache 🙂

Eating naturally sweet foods like carrots and sweet potatoes is a
great way to keep your sweet tooth at bay. Roasting these
vegetables brings out their natural sugars and makes them taste
even sweeter. The sweetness of these thyme-roasted carrots works
perfectly with the savory mustard pork loin.

Prep time: 10 minutes
Cook time: 40 minutes
Serves: 4 – 6

Ingredients:

2 lbs. pounds pork loin
2 T. Dijon mustard
2 T. sugar-free whole grain mustard
1 T. extra virgin olive oil
Salt and pepper, to taste

1 lb. tri-color baby carrots
2 garlic cloves, minced
2 T. balsamic vinegar
1 T. coconut oil, melted
2 T. fresh thyme leaves
Salt and pepper, to taste

Directions:

Preheat your oven to 400 degrees F and line a large, rimmed
baking sheet with a piece of parchment paper. Place the pork loin
in the center of the lined baking sheet and set aside.

In a small glass or other non-reactive bowl, combine the Dijon
and whole-grain mustard with the olive oil. Massage the pork loin
with the mustard mixture, then sprinkle both sides with salt and
pepper, to taste.

Place the baby carrots in a large bowl and add the garlic,
balsamic vinegar, coconut oil, and fresh thyme. Season with salt
and pepper, to taste, and toss to combine.

Spread the carrots in a single layer around the seasoned pork
tenderloin on the baking sheet and pour any remaining juices from
the bowl on top.

Cook for 20 minutes, then remove the baking sheet from the oven
and flip the pork. Cook for another 15-20 minutes, or until the
pork reaches an internal temperature of at least 145° for
medium-rare and the carrots are nicely caramelized.

Remove from oven and let pork loin rest for 3-5 minutes before
slicing. Serve warm with roasted baby carrots. Enjoy!

Fresh seasonal berries and mint give this vibrant salad a
refreshing burst of flavor. The addition of raspberries to the
homemade vinaigrette lends some natural sweetness to this dish.

Prep time: 15 minutes
Cook time: none
Serves: 4

Ingredients:

¼ c. rice wine vinegar
1/3 c. fresh raspberries, washed
2 t. fresh lemon juice
½ c. extra virgin olive oil
½ t. sea salt
1 head Romaine lettuce, washed, stem removed, and chopped
1/3 c. fresh mint, chopped
1 c. fresh strawberries, washed, hulled, and sliced
1 c. fresh blackberries, washed
1/3 c. sliced almonds, toasted

Note: Chill salad plates prior to preparing this recipe.

Directions:

Add vinegar, raspberries, lemon juice, and olive oil to a food
processor and blend until smooth. Add salt and taste. Adjust
other flavors to achieve the desired balance. Set aside.

Add lettuce, mint, strawberries, blackberries, and toasted
almonds to a large bowl and gently toss to combine.

Drizzle with raspberry vinaigrette and serve immediately on
chilled salad plates for a refreshing appetizer.

These delicious pineapple-stuffed avocados are perfect as a
healthy lunch entree or a light dinner – especially on those warm
summer days when you don’t want to spend much time in the
kitchen!

Prep time: 20 minutes
Cooking time: 2-3 minutes
Serves: 4

Ingredients:

2 T. extra virgin olive oil
8 oz. Jumbo shrimp, peeled and deveined
2 t. ground cumin
Salt and pepper, to taste
¼ c. fresh lemon juice, divided

2 large avocados
1 c. fresh pineapple, diced
1 T. fresh pineapple juice
1 small red onion, diced
3 T. fresh cilantro, stems removed and chopped

Directions:

Heat olive oil in a medium-sized skillet over medium heat. Pat
the shrimp dry with paper towels and add to the hot skillet. Add
ground cumin and season with salt and pepper, to taste.

Cook shrimp for approximately 2-3 minutes, stirring frequently.
Remove pan from heat and add 2 tablespoons of fresh lemon juice.
Stir to combine and transfer to a small bowl. Cover and place in
the refrigerator to chill.

Cut avocados in half lengthwise. Remove seed and score the flesh
in evenly spaced rows lengthwise and crosswise to create
equal-sized chunks. Scoop avocado out of shell and toss with
remaining 2 tablespoons of lemon juice to prevent browning.
Reserve avocado shells and set aside.

Add avocado, pineapple, pineapple juice, onion, and cilantro to a
large non-reactive bowl and stir gently to combine.

Remove chilled shrimp from the refrigerator and chop into
equal-size chunks. Fold shrimp into avocado-pineapple mixture.
Season with salt and pepper, to taste.

Spoon shrimp mixture into reserved avocado shells and serve
immediately. Enjoy!

no-no when trying to maintain a healthy diet. However, this
recipe features one time-saving convenience item that won’t
have a negative impact on your health! You can now find
pre-packaged butternut squash “noodles” in most larger
grocery stores and they are absolutely perfect for those nights
when you need to get dinner on the table quickly.

Of course, if you have a vegetable spiralizer, you can always
make your own butternut squash “noodles” in just a few
minutes. Either way, you’re going to love this fast and
delicious dish!

Prep time: 5 minutes
Cooking time: 8 minutes
Serves: 4-6

Ingredients:

2 T. extra virgin olive oil
4 c. pre-packaged butternut squash “noodles”
3 T. unsalted butter
1½ T. fresh sage, chopped
2 t. ground cinnamon
Sea salt and freshly ground black pepper, to taste.

Directions:

Heat olive oil in a large skillet over medium heat. Add butternut
squash noodles and cook for 4-5 minutes, turning frequently to
ensure they cook evenly. When noodles are slightly softened,
remove from pan and set aside. Keep warm.

Add butter to pan and heat until melted. Stir in chopped sage and
cinnamon and cook until fragrant, approximately 2-3 minutes,
stirring frequently.

Return butternut squash noodles to pan and toss to coat in sage
butter mixture. Remove from heat and season with salt and pepper,
to taste.

Serve immediately with your favorite entrée or as a light main
course.

These rustic pork chops are packed with tons of flavor, and they
are so quick and easy to prepare. This recipe is sure to become a
new go-to family favorite!

For best results, allow your pork chops and dairy ingredients to
set at room temperature for 30 minutes or so before you begin
cooking. Cooking meat right out of the refrigerator will take
longer and your results will not be as consistent. Adding chilled
dairy products to hot sauces can cause them to curdle.

Prep time: 5 minutes
Cooking time: approximately 25 minutes*
Serves 4

* Actual cooking time will depend on how thick your chops are and
their internal temperature when you start cooking them.

Ingredients

3 T. extra virgin olive oil
4 bone-in pork chops, approximately 1/2” thick, room
temperature
Sea salt and freshly ground black pepper, to taste
8 oz. white mushrooms, washed and sliced
2 T. yellow onion, finely minced
2 cloves garlic, peeled and minced
¾ c. chicken broth, preferably organic
¼ c. half and half, room temperature
¼ c. non-flavored, full-fat Greek yogurt, room temperature
3 T. fresh parsley, stems removed and leaves finely chopped,
divided

Optional: 1 t. ground arrowroot (to thicken sauce)

Directions:

Heat olive oil in a large, heavy-duty skillet over medium-high
heat.

Season pork chops on each side with salt and pepper to taste and
add to the hot skillet. Brown pork chops on each side,
approximately 3-4 minutes per side.

Remove pork chops from pan and set aside. Reduce heat to medium
and add sliced mushrooms to pan. Cook until mushrooms release
their juices, approximately 6-7 minutes, while stirring
occasionally. Add onion and garlic to pan and cook for 1-2
minutes more, stirring once or twice.

Deglaze the pan by adding the chicken broth and scraping up the
brown bits on the bottom. Add the pork chops back to the skillet
and reduce heat to low. Cover and cook for approximately 8-10
minutes or until chops are cooked through.

Transfer chops to a serving plate and cover to keep warm. While
the chops rest, stir in the half and half, Greek yogurt, and 2
tablespoons fresh parsley until blended into the pan sauce.
Continue cooking until heated through, about 1-2 minutes. Season
with additional salt and pepper, to taste, and remove from heat.

To serve, spoon mushroom sauce over the pork chops and sprinkle
with additional parsley. Serve immediately.

Tip: If you prefer a thicker sauce, combine 1 teaspoon of
arrowroot with some water and stir the slurry into the pan before
returning the pork chops to the pan to finish cooking.

takes less than 20 minutes to put together and can be enjoyed

Prep time: 10 minutes
Cooking time: 7 minutes
Serves 4-6

Ingredients:

1½ lbs. fresh green beans, tips removed and cut in half
1 pint grape tomatoes, washed and cut in half
1 T. fresh basil leaves, finely chopped
1 T. fresh parsley leaves, finely chopped
3 T. extra virgin olive oil
2 T. sherry vinegar
Sea salt and black pepper, to taste
1 c. Feta cheese, crumbled

Directions:

Over high heat, bring a large pot of salted water to a boil. Add
green beans and cook until crisp tender, approximately 3-4
minutes. Drain the green beans and then transfer to a large bowl
of ice water to prevent further cooking.

Remove green beans from the ice bath and pat dry before adding to
a large glass or other non-reactive bowl. Add the tomatoes,
basil, parsley, olive oil, and vinegar to the bowl and toss to
combine. Season with salt and pepper, to taste.

Gently fold in crumbled Feta cheese and serve immediately. Salad
can also be chilled and served cold.

Here’s a creative way to use pre-cooked rotisserie chicken for
a quick and flavorful weeknight meal.

For best results, prepare the cilantro-lime sauce the night
before so the flavors have a chance to thoroughly blend. You can
also prepare the fajita seasoning in larger batches and store in
an airtight container for later use. Planning ahead will save you
even more time on those busy nights you want to get dinner on the
table as quickly as possible.

Prep time: 15 minutes
Cooking time: 15 minutes
Serves 4-6

Ingredients:

Homemade Fajita Seasoning:

3 T. chili powder
1½ T. smoked paprika
2 t. onion powder
2 t. garlic powder
2 t. ground cumin
½ t. cayenne pepper
1 t. dried oregano
2 t. sea salt

Cilantro-Lime Sauce:

1 c. plain, full-fat Greek yogurt
1 T. homemade fajita seasoning
1 clove garlic, peeled and finely minced
2 T. fresh cilantro, finely chopped
2 T. fresh lime juice
Salt and pepper, to taste

Fajitas:

2 T. extra virgin olive oil
1 red bell pepper, sliced thin
1 green bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 orange pepper, sliced thin
½ small red onion, sliced thin
1 T. balsamic vinegar
Salt and pepper, to taste
3 c. rotisserie chicken, shredded
2-3 T. homemade fajita seasoning
¼ c. chicken stock, preferably organic
¼ c. fresh cilantro, roughly chopped
3 green onions, green parts only, sliced
2 T. fresh lime juice
1 head Romaine lettuce, washed and separated into individual
leaves

Directions:

Prepare the fajita seasoning by combining all ingredients in a
small bowl and stirring until thoroughly blended. Store any
excess in an airtight container for later use.

Prepare the cilantro-lime sauce by thoroughly combining all
ingredients in a medium glass or other non-reactive bowl. Cover
and place in the refrigerator until ready to use.

Heat the olive oil in a large skillet over medium-high heat. Add
the bell peppers, onion, and balsamic vinegar to the skillet and
season with salt and pepper, to taste. Cook for 10-12 minutes or
until the onions and peppers are crisp tender.

Add the shredded rotisserie chicken, fajita seasoning, and
chicken stock to the skillet and stir to combine. Cook until
heated through and excess liquid is gone, approximately 3-4
minutes. Season with additional salt or fajita seasoning, if
desired.

Remove skillet from heat and stir in the cilantro, green onions,
and fresh lime juice. To serve, spoon mixture onto individual
Romaine lettuce leaves and top with a drizzle of cilantro-lime
sauce. Enjoy!
